91 Colorado Whiskey has partnered with Marianne Eaves for the exclusive 2021 Eaves Blind series. This collaboration is part of a collection of unique whiskey blends created by Eaves in conjunction with select non-Kentucky distilleries. As Kentucky’s first female master distiller, Eaves brings her exceptional palate to the 291 “E” Eaves release, one of eight specially curated single-source blended bourbons in the Eaves Blind program. This endeavor not only educates on the subtleties of bourbon tasting and production but also underscores that exceptional bourbon can be crafted anywhere, not limited to Kentucky.
With an alcohol content of 64.1% Alc. / 128.2 PROOF, this release showcases Marianne Eaves' award-winning palate. Michael Myers, Owner and Founding Distiller of 291, notes that the Eaves’ 291 ‘E’ release retains the essence of 291 but with Eaves' unparalleled touch.
For this inaugural release, Eaves spent time with the 291 team, sampling their Colorado bourbon finished with Aspen staves. Utilizing her expertise, she crafted the ideal version of 291 Colorado whiskey, resulting in the exceptional 291 “E” Eaves Release. This bourbon, with a proof of 129.6, boasts a delightful blend of smokey sweet grain, oak, floral and fruit notes, and a harmonious balance of green vegetal undertones with sweetness and dark spice.
Speaking on her blending process, Eaves remarks, “Blending is as much of an art as distillation. I want individuals to savor this release and recognize it as quintessential Colorado whiskey. This is 291."
